Caledonia Spirits Barr Hill Tom Cat Gin Chenin Blanc An historic recipe using oxidizedCaledonia Spirits founder Todd Hardie spent five decades as a beekeeper and honey producer in Vermont before deciding to try his hand at distillation. Starting with a neutral corn spirit base, it is re distilled with juniper and fresh raw honey. Each batch of the Tom Cat is then aged in new charred American oak barrels for 4 6 months. Very expressive on the nose, with fresh lemon zest, coriander, pine needles and honeysuckle. More whiskey like notes
